It’s been so long since I’ve talked about food! Tonight I had one of my new favorite dishes, so simple and so very delicious: Peanut butter, banana, and honey.

I normally eat this on a wheat pita, but I only had bread tonight. Either way, toasting the vessel is critical so the peanut butter melts into every crevice and becomes mmm-mmm-creamy-good. My current favorite peanut butter is Valencia Peanut Butter with Roasted Flaxseeds from Trader Joe’s. You have to stir it the first time, but after that you keep it in the fridge and you don’t have to stir it again.

Truthfully? You don’t need the honey. The PBB is plenty sweet without it. I just love the subtle flavor and additional goo.

  • I do a PBC; Make a peanut butter sandwich with extra sharp cheddar cheese on the PB. Then pop it into the toaster oven to desired brown-ness. Talk about melty, creamy goodness. Mmmmm.
